Monte Nevado Fatty Pig Award
The Monte Nevado Group is a family-owned company based in Carbonero el Mayor (Segovia, Spain) and dedicated for four generations to the production of Serrano, Mangalica and Iberian ham. The company sells over half a million hams in more than 30 countries, with national facilities in Segovia, La Rioja and Salamanca and international branches in France, USA and Canada. Specialized in long-term high-quality fat ham, Monte Nevado was responsible for the recovery of the Mangalica breed in Hungary, which was in critical danger of extinction in 1990. The company currently owns three farms in Hungary that guarantee the maintenance of such breed.
Monte Nevado is a company strongly devoted to research and development initiatives. For this reason, it has carried out numerous R&D projects in recent years and has been involved in several publications, where the Atlas Monte Nevado de Anatomía del Jamón Serrano might be one of the most significant contributions.The main objective of this company is to obtain a high-quality ham by a thorough inspection from the arrival of the raw material to the production of the final product.
Objective of the award
The aim of this initiative is to select and award the best original study in applied research on the improvement of pork meat quality in relation to its suitability to produce high-quality cured ham.
In this call, we will particularly consider research focused on genetic, animal production or production process improvements devoted to favor the deposition of intramuscular fat, improving the lipid profile of the meat, preventing the appearance of PSD and DFD meats, promoting the reduction of proteolytic potential of meat (that favors suitable textures), and any other contribution that is susceptible to improve the sensorial evaluation of the final product.

- Authorship affidavit and rights declaration on the work submitted.
Instructions for manuscripts
The text will be written in English and given in the format given in the attached template, with special attention at figures and tables.
The manuscripts will be structured as follows: Introduction, Materials and methods, Results, Discussion, Conclusions, and References. An Abstract (maximum 300 words) and a Keywords section (maximum of 5 keywords) will be also included in the submitted manuscripts.
The maximum length of the manuscript will be 5000 words, including the References section.
References along the text should be numbered consecutively in strict order of appearance and identified by Arabic numbers in brackets. Personal references or other unpublished works (especially those without a DOI number) should be avoided.
In the References section, the references will be listed as they were quoted and following the system of abbreviations given by the Web of Science’s list, if applicable.
Award
The prize consists of 2.000 €, a Mangalica Monte Nevado ham and a commemorative plaque.
Deadline
Only the manuscripts submitted until september 10, 2021 will be accepted.
Communication of the awarded manuscript
The communication will be made during the 6th Fatty Pig International Conference 2021.
Scheduled date and place
The awarded work will be presented in the 6th Fatty Pig International Conference , which will take place on the 20-22nd of October 2021, in the Evergreen Plaza Hotel Tainan (Taiwan).
Other remarks to be considered
1.- Call acceptance
Participants of this call are supposed to agree with the current terms and reject to take legal actions against the committee of reviewers. Any query about the contest rules will be communicated to the Organizing Committee, who will communicate it then to the applicants, if applicable.
2.- Claims
No claims upon the selection of the awarded applicants will be accepted.
3.- Protection of personal data
The personal data will be voluntarily and strictly provided to the Organizing Committee for further arrangements, thus being the Law of Protection of Personal Data and current regulations of obligatory compliance.
The participants exempt the Organizing Committee from any liability arising from the violation of the current legislation regarding the performance and development of the works awarded.
The applicable legislation to these bases is originally Spanish and, thus, the parties expressly submit the jurisdiction of the Court of the city of Segovia (Spain), waiving any other jurisdiction they may be entitled to.
