Campus del Jamón Monte Nevado
The first Training and Research centre dedicated entirely to the world of ham. With more than 1.200 m2 of facilities and 350 places for professionals and students, it is an innovative multidisciplinary project for professionals in the sector to expand their knowledge.
The Campus del Jamón will cover all aspects related to ham: from pig genetics and feeding, to tasting or sensory sampling, through to curing processes, drying thermodynamics, cutting, and industry regulations. A forum where artisanal knowledge, technology and ham research will be united for the first time.
