Origens

The history of Monte Nevado goes back to a family from the highlands of Segovia, an area exposed to the winds of the nearby snow-capped mountain peaks, with extraordinary climate conditions for curing ham.

In the XIX century, after returning from the Spanish-American War, Juan Olmos used the savings from his military pay to purchase a few hundred pigs. The family combined agriculture and a public cereal mill with pig breeding to cure hams and thus launch a saga of master ham artisans.

In the 1930s, the next generation began to focus more for the ham, equipping the mill with a refrigeration chamber. That’s when the first clients arrived from Madrid, and with them the growth of the company. The production of hams from their own livestock was complemented with additional livestock from trustworthy sources, and work activity now focused on curing hams in the best possible way, selecting the exact curing point for each ham. This has been the family’s motto: ham at its moment of perfection.

During the 1960s and 70s sales increased throughout Spain. 1975 saw the construction of a major drying facility with a capacity for curing 35,000 hams.

In 1970 the brand name Monte Nevado was created, noted for its slow and lengthy natural curing processes, which requires the selection of the highest quality hams with greater fat content.

This continuous commitment to quality and longer curing processes opens the door for the sale of our product in the best establishments in Spain, which have been at our side since then. They know how to take care of and serve our hams to a clientele that demands the highest quality.
