Our bellota ham 100% Iberico breed comes from free-range animals of pure breed that during the mast feeding of the montera period roam in the dehesa oak forests where they feed on acorns and grass.

Our Iberico de cebo ham comes from pigs of the iberico breed crossed with Duroc.

MANGALICA HAM PRESLICED (PACK 3X85 GR.)

Mangalica, bred in the Hungarian steppe, fed on corn, wheat and grasslands, and naturally cured in Spain.

SERRANO HAM 24 PRESLICED (PACK 3X85 GR.)

Serrano ham "24", is from pigs of Celtic origin, bred in Spain and selected for their size, age and proportion of fatty material.

The fame of the Monte Nevado Serrano ham is a matter of experience: for many years we have known how to find the key to a unique maturation process.

We select hams from heavy pigs, which allows us to extend the curing process for an average of 24 months.

When it’s ready, Serrano 24 exits our main gate: it has reached its moment of perfection.

Mangalica is a native Hungarian breed, with curly, thick and long hair, genetically related to our Iberian pig.

The Mangalica spends the harsh winters in the Hungarian steppe. Its walker nature and its natural feeding based on corn, wheat and grass, combined with the maturity it reaches, makes it suitable for cured products of the highest quality.

 The breed had a great development in the Austro Hungarian Empire, but after the Second World War, its population went into decline. In 1990 there were less than 200 specimens.

Looking for a pig with qualities for the elaboration of a slow and long curation ham, Monte Nevado found some specimens and, after years of intense work, selection and breeding, it avoided its extinction.

Thus was born a specialty : breeding in the traditional Hungarian style, but healing in Spain in the Monte Nevado style.

This ham comes from pigs whose breed and slow growth result in optimal marbling. With 120 years of history, we know where to find the finest livestock and select the best raw material from which we meticulously produce our shoulder hams.

Monte Nevado selects its dehesa oak forests by looking for sweet-tasting fruit and an abundance of grass and water.

Since 1898 we have known the best livestock and the best pastures for the free-range mast-feeding of the montanera period, protected from the cold winds so that our pure Iberico pigs can happily roam, eat and rest peacefully, surrounded by holm oaks, gall oaks, oaks and cork oaks.

Our master ham artisans review and classify each shoulder ham piece by piece, and are responsible for ensuring that each one receives the appropriate maturation period. Our experts decide when each piece is ready and worthy of carrying the Monte Nevado label. Each ham shoulder at its moment of perfection, no matter how long it takes

Time and air…

Our slow and lengthy natural curing process allows us to get the best aroma and flavor from each piece: each one reaches its point of perfection at a different moment.

All of the cellars and dryers at Monte Nevado are situated in natural environments. Additionally, the windows allow us to take full advantage of the fresh mountain air, just as our forefathers did. This makes our drying process softer and more natural.
